Kaffir Lime Leaves and Fish Cake Recipe

Try this great recipe from A Simpler Place in Time.

Fresh kaffir lime
leaves - Keep well in a refrigerator for at least 2 weeks. Used in Asian
(especially Thai) dishes like curries and fish cakes. If the recipe calls for
kaffir lime leaves and you can't find any, skip the
leaves. Don't substitute. The fragrance is so distinct that it is
irreplaceable.


Spicy Fish Cakes

- 1 lb. mild fish
- 1 tbsp. fish sauce
- 1 tbsp. Asian chili
sauce
- 1 tbsp. cornstarch
- A few green beans, snow peas
or sugar snap peas
chopped into small
pieces
- 3 kaffir lime leaves

Grind
the fish finely and mix with the rest of the ingredients. Form into small cakes
and saute in a skillet with some vegetable oil until nicely browned on each
side. Serve with hoisen, chili, or sweet and sour sauce.
